Vegetable Akbari
(Serves - 4 )
Ingredients
2 onions - cut into rings
1/2 cup peas - frozen or boiled
10-12 french beans - cut into small slanting pieces
1 carrot- cut into small cubes
1 capsicum - cut into small cubes
3-4 tbspns oil
1 tsp salt
1/2 tsp red chilli powder.
10-12 kaju
15-20 kishmish - soaked in 1/2 cup water for 10 mins.
1/4 cup (50 gms ) fresh malai or cream
4-5 saboot kali mirch ( pepper corns) crushed to a powder.
Method
1. Heat oil. Add onion rings and cook till they are brown. Reduce flame.
2.Add kajus, stir-fry for 2-3 mins
3.Add beans and carrots. Cook covered till vegetables are done. Sprinkle 2-3 tsps water occasionally if
required.
4.Add capsicum and peas> Cook uncovered for another 3-4 mins on low flame.
5. Add salt and red chilli powder to taste.
6.Add kishmish. Mix well for 1-2 mins.
7. Add cream and fresh pepper corns. Mix remove from fire. Serve.

Good recipe. Actually, this step:
2.Add kajus, stir-fry for 2-3 mins
may need more time, depending on the type your frying pan.

G-day AlexG Cashews are Kajus in Urdu even as far as i referred in the Asian Recipe Glossary, n i hope im right. Many ThanxG.
